(Recipe) *Sighs* By popular demand: The Grits Casserole Recipe

Pretty sure if you follow my Instagram, Twitter or Facebook, you've seen me 'cooking'. I mean, you don't get to be a 'big strong man' by waiting for someone else to 'cook for you' so yes, I CAN COOK. Well, might I add. Anyway, here is a recipe that some of you have been clamoring for....WELL.... FOREVER. I'm going to give it out. I suggest you screenshot it or something. It might go 'poof' on you. lol

I made one THIS MORNING. Yes it was good. I think it is the only thing I ate today as a matter of fact. It is that filling. Even if you 'don't like grits', you should 'try it out'. I've converted MANY A PERSON who doesn't like them with this one recipe alone. **

I've 'threatened' to put this recipe up before to the dismay of some and to the PURE DELIGHT OF MANY. Well today I am going to put it up. Whether it stays UP is another story but I am willing to put it out there due to the INCREASED requests for emails and such. I'm even going to give loose instructions. (My suggestion to you is TO HONESTLY use your own methods after you fool with it a couple of times. Some of you may find your OWN VARIATION of the recipe like I did.)

So without further adieu, here we go....Some of you are about to get TWO LESSONS. The first being the casserole but the SECOND BEING HOW TO MAKE GRITS PERIOD. Here's what you will need:

One whole onion

A bag of celery (You may or may not use all of it. That is YOUR CALL..I do.)

One whole green pepper (Again, size varies depending on how much you like green peppers. I prefer a large green pepper myself so..)

Now I happen to use spinach and garlic too as I like them. You don't HAVE TO. The base veggies are good ALONE. I try to add some other 'value' to the dish. Plus, I like both of them so there's that. If you DO DECIDE to add these two into the mix, add them LAST after you've cooked down the first three. Both of these take NO TIME TO COOK SO YOU WILL BURN THEM OTHERWISE AND WHILE I LIKE MY CELERY, ONIONS AND PEPPERS 'CHARRED', my spinach and garlic I don't. Also, chop the spinach a bit. That way it will distribute evenly. Leaving it whole will work but you will find it BIG CLUMPS instead of bits like the rest of the things you are adding to the dish.

Cream of Chicken Soup (The low cal/sodium version works GREAT WITH THIS RECIPE due to the many other ingredients. I've used both)

Shredded Cheese (Chedder, Cheddar Jack, Mexican blend... all work. A combo all work.. again, depending on what you actually LIKE.. )

2 CUPS OF GRITS. (Meaning, you need to boil 6 CUPS OF WATER....add the grits and CHECK THE GRITS for those of you who are challenged in the art of making grits. You should be able to take your spoon and DRAG* it through the grits and they bounce RIGHT BACK into the place you just removed your spoon from. If it is 'soup', they aren't stiff enough. Keep COOKING THEM. Do NOT COOK THEM TO THE POINT THAT YOU CANNOT DRAG YOUR SPOON THROUGH THEM. Going to be kinda hard to mix things with them WHEN THEY ARE THAT STIFF. Even with CHEESE, YOU SHOULD ABLE TO GET YOUR GRITS TO THIS CONSISTENCY. Matter of fact, the cheese will MAKE IT CREAMY if you do it right. In the event that you can't get them EXACTLY right, remember that it will be baked so 'SOME' of the water may be absorbed UP. You should be okay. Just try to get it as CLOSE to that consistency that I described.

A BAKING PAN. It doesn't have to be SUPER DEEP but I would suggest using a deep one. That way, when you spoon it out, there is a nice serving given.

*Drag = stir for the most part. I used that term because you can 'stir' soupy grits too but it takes more of an effort when you have to 'drag' the spoon through.

Cook two cups worth of grits. You can make them cheese grits of you want but do not make them too thick or too watery.  You will be combining them with other stuff so do not make them too stiff.

Take one whole onion, about 7-8 stalks of celery and Green pepper,  chop them up and sauté them in a pan.  I suggest using Pam or Olive Oil honestly. It just works better and is lighter. Besides,

What you see here is where I was combining grits with sausage and grits. I was making two at a time.  Veggie pan for the second one is to the left.

You can add whatever veggie you like btw.  I add spinach and garlic personally. I'd experiment with different veggies and see what you come up with.

Cook one roll of sausage in a separate pan.  Drain and let it sit. As with the veggies, you can use OTHER TYPES OF MEAT. Turkey ground (I've done this with great success) w/some sage and a light salt, hamburger, etc, etc.. I have even done a seafood one (shrimp..even though I couldn't really eat as I am allergic..crab..salmon, etc, etc)

Add cooked veggies with the sausage.

Take out your baking pan and add your sausage and veggies first then combine the grits in.

You will need a can of cream of chicken. Spoon it out and spread it evenly over your mixture of grits, sausage and veggies.

Shredded cheese as well for the top of the casserole. Again, spread evenly... Make sure you get the corners.

I bake mine at about 375 or so. Give it about 45 mins under foil then another 10 MINS without it or until the top crusts up.  It is better the next day but you probably won't be able to wait so long so let it set for about 20 mins.

Enjoy and DON'T TELL MY MOMMA I GAVE THIS OUT. She will have my head.... "Hi Momma!"

** I have to add that I don't think some of you have had grits in the proper setting, i.e. Bob Evans or some dive that has them 'pre made' and sitting out. Naw B. You need to go to someone's HOUSE and have them make them before you declare you don't 'like them'. lol The vast majority of you haven't had them made properly enough to even utter the words, "I don't like them". You truly haven't 'had them'.

Another installment of the 'Chat Series'....Mini chat time... @FEOfficial (@phontigallo & @nicolaymusic)

Remember when said 'I asked some of the questions some you loyal fans wanted to know..' in  the post I made on the concert in Durham that took place on February 20th 2011? Those questions ya'll always hit me with when it comes to The Foreign Exchange and their members that I said I would ask. Well here they are. I took the top three questions and made sure I asked them. Nothing TOO EVASIVE. Nothing too silly. Nothing too 'revealing'. Not my style at all. I just wanted to make sure I got ya'll some of the information that you asked for that I couldn't DEFINITIVELY answer without speaking to them. Here you go. Enjoy.

*Please bare in mind.....This is all 'small talk' so don't think for one minute I THINK it was a full on interview. @ all you 'professional bloggers/interviewers/big wig people. I didn't think it then and I MOST CERTAINLY DON'T THINK THAT NOW.  The conversation, while prefaced with 'Let me ask you some questions fam..' was NOT presented that way when I was speaking to them so there are parts chopped out. On PURPOSE. Deal with it. I wouldn't do them (or anyone else like that) @ any remarks that I think wouldn't be said 'on the record' or without it being known that it is ON THE RECORD. So anything I feel that may be taken the 'wrong way', I won't talk about while still giving out some information that may be 'useful' to someone who is interested in their work. Understood? Good. Still and all,  these gentlemen don't hold their tongues in ANY INTERVIEW I HAVE SEEN..lol  so don't think that if they didn't want it to be known, they would have said it. Are we crystal clear? Aight then. This 'information' is FOR MY READERS. If you happen to stumble upon (or read it via retweet via one of these gentlemen) the information GOOD FOR YOU. I am not calling it some 'scoop' or anything. They are just questions. Get off your own dick and formulate YOUR SHIT HOW YOU WANNA. This is MY SHIT. @ any questions about style, format or any of that other elitist bullshit ya'll get on when you didn't 'write it'.

Sorry about that ya'll. You ALREADY know how I am. Preemptive like a MOTHERFUCKER. So without further delay here is another installment of the 'Chat Series' if you will...Albeit brief...Only this one happened IN PERSON.

Question one was for Nicolay:

The Warehouse: How in the WORLD is that you ended up working with a young Wiz Khalifa? How did that come about?

Nicolay: That actually came about as an idea within the label. It was suggested that we work together and he was great to work with. Now mind you, Wiz was YOUNG...I am talking about twelve or thirteen...naw I'm kidding....but he was really young when I got to work with him....It is good to see him having success now after years of working....

The Warehouse:.....yeah..I think people think he just 'came outta nowhere'....He didn't. I STILL have emails from him when he was pushing his music via that medium.

(Someone else in the background chimes in...) I didn't know you had tracks with him.....Can you name one I should check for? (The irony is..this track is in the music player of this very blog. For some of you, it might BE PLAYING RIGHT NOW..)

The Warehouse: It is a very different Wiz spitting on those tracks...He isn't talking about (Makes smoking motion) on these joints. Anyone who says that he 'can't rap about anything else' should probably check for these joints for starters. I am not mad at him either. Obviously, he reps the team I LOVE but that isn't why. He is doing what he has to do. Even if I don't 'dig all the music he does'...

Nicolay: Agreed.

Question number 2 was for both Phonte and Nicolay:

The Warehouse: Will Nicolay be working on Phonte's solo album coming in the Fall? (I will let that sink in for a minute in case you have been living under a rock and DIDN'T KNOW THAT PHONTE HAD A SOLO JOINT COMING..and it is COMING. He committed to it via Twitter and in this very live session I am recapping...)

(Nicolay looks at Phonte with that wry grin...and they both say in unison damm near..) NO....

(Mr. Coleman speaks up) NO. I wouldn't ask my man to go backwards in that fashion. Ya know what I mean? Kinda been there done that...So no he will not be working on my solo album...

The Warehouse: (Holds hands up in a 'Don't shoot pose'...) I HAD to ask just to get that outta the way. I didn't THINK SO but I wanted to ask for myself. To hear it with my own ears....

Phonte: 'Tis all good my nigga...

The third question I actually revealed in the recap post. I will spell it out for you again though. Just in case you skimmed over it.

The Warehouse: What new instruments are you working on playing for us Nic?

Nicolay The electric guitar...there are some other instruments that I am working on as well but the main one has been that guitar. I am proud to say that I am unveiling that this evening.

The Warehouse: Looking forward to that! (After having heard him play...I am looking forward to you guys hearing it too. It was a good look.)

So there you have it..The three questions that most people ask me about the musical troupe known at The Foreign Exchange. You ask 'em, I relay 'em and get the answers. So the NEXT TIME I ask you guys to participate in a 'Ask your favorite artist questions' type of deal, DO IT. You never know. I might ask YOUR QUESTION.

Now I know some of you don't REALLY get just how known these cats are. I kinda hear some 'skepticism' in your voice when I mention them. So I am going to PLUG ANOTHER SOCIAL MEDIA SITE (I do that often here actually 'cause truthfully it isn't that deep to me. Knowledge is knowledge. Ya dig?) and let you see how they were received on their European tour that they JUST GOT OFF OF.

and they are coming to a city near you. Check THEIR WEBSITE FOR DATES..A certain blog's post on said site.....Here let me help you with THE MAIN LINK that so you don't have to Google it....

P.S. (Whispers)
The BLUE WORDS= actual links to the shit I am saying. Click 'em. They will take you to where those aforementioned posts and pictures are.

The boy Mike Jaggerr, Sway and I.....

A good time was had by all last night at Mike Jaggerr's mixtape release party held in Wilmington, Delaware on Friday, February 4, 2011 at The Lux. The boy Jayson Rodriguez was holding court along with Grouchy Greg of AllHipHop.com, producer Rich Nice and many more were  in the building. Delaware really came out to support...

You can get Mike's tape here.....

http://www.mikejaggerr.bandcamp.com/

Afterward, I got a chance to sit with Mike Jaggerr and listen to some of his upcoming heat from his next mixtape....Let me tell you, the boy is on it! Producing. Rapping. Singing. Arranging. Looks and sounds like he is covering his all bases. Real good dude and I was glad I got a chance to chop it w him.

Here are some more pictures from the night's festivities.....

As for Sway, he was the same as you see on TV. Very personable and a man of the people. He took the time to shake each hand and hold a conversation and in some cases several (hint..hint..PUSH..@ yours truly) with everyone in the room which is big to me. I mean, he could have stayed holed up in the corner. He did not. I respect that about him. Real good dude.

Greg was just.....just wait 'till you see the pictures of my boy Greg. Same ole Greg. Very proud of him and glad everyone gets to see the Greg that I know and have known for years....

Mike Jaggerr, Sway and producer Rich Nice....

This is my boy Ali.Batts....the subject of Jayson's first EVER feature article (and my best friend..yeah I had to throw that in there..lol) with another good friend of ours..The incomparable Grouchy Greg of AllHipHop.com....
